Risotto Rice Recipe

  • 1.1 litre organic stock eg. fish,chicken,vegetable.
  • 1 piece large onion chopped
  • 2 cloves garlic
  • 1/2 head celery
  • 90 gram Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 cube unsalted butter
  • 400 gram risotto rice
  • 2 glasses wine or dry white wine
  • 1/2 piece freshly ground pepper for taste only


  1. Bring the broth to a simmer in a medium saucepan over such a medium heat. Then reduce the heat so the broth remains steaming.

  2. Heat oil in oven over the medium low heat. Add onions and cook, stirring constantly,until it softened,about 2 minutes. Add garlic and cook,stirring,until it gives fragrant(aroma),about 30-40 seconds. Add rice and salt and stir it to coat.

  3. Stir 1/2 cup of hot broth and put a generous splash of wine into the rice. Then cook,stirring frequently, until the liquid has been absorbed into the rice. Continue to cook on a low-medium,adding broth in 1/2 cup by a splash of wine,and stirring frequently after the each addition, up to most of the liquid is absorbed. The risotto should be done until all the broth,wine and rice is creamy and just tender 26-36 minutes.

  4. Then remove from the heat sir in the 3/4 cup of cheese and pepper(optional). Serve sprinkled with the remaining 1/4 cup cheese.

Recipe Notes

Stir rice carefully and also check the water to absorb. Do not over heat the risotto.
