Low fat roasties

This recipe is good for diabetes patient because it accomodate all those nutrients which are very essential for the diabetes patient.

Ingredients

  • 800 gram roasting potatoes, quartered
  • 1 garlic cloves sliced
  • 200 ml vegetables stock
  • 2 tbsp olive oil

Instructions

  1. Heat up Oven up to 180-200 degrees. put potatoes and garlic in a roasting tin.
  2. Pour over the stock, the brush the tops of potatoes with half the olive oil.
  3. Season it then cook it 50 minutes.
  4. Brush it with remaining olive oil and then cook it for further 10-15 minutes.
  5. If you desire to absorb the stock then cook it util it is absorbed.
