Chicken Broth and the Candida Diet

It took me several years of cooking to appreciate the value that chicken broth and stock, as a matter of fact all types of broth and stock, bring to cooking. What was once sort of a specialty item in my kitchen has now become a mainstay on my weekly shopping list. I frequently purchase both chicken and vegetable broth and stock for a variety of my family’s favorite dishes. I have never found it convenient to make and store my own so I rely heavily on commercially available products. Although there are numerous types of broth and stock available in the supermarket the majority of these contain ingredients that could be hazardous to your health. As I do not want to consume hazardous ingredients and since I follow the candida diet, a diet to help treat candidiasis, picking an appropriate chicken broth can be a challenging task. Candidiasis is a condition in which through numerous external factors yeast (candida) overgrows in the body. This overgrowth of candida can cause numerous health problems. Many times candidiasis patients go for years without any explanation for there ill health. I have found that the most widely used prohibited...

The Influences of Italian Cooking

When people think of Italian cooking, most think about pasta and pizza pies. However, there are so many more dishes and influences that inspire those dishes. The history of the Italian people, as well as Italy’s geographical location, both contribute to the types of food. Italian culture is shown through its cuisine. There are about 20 regions in Italy and different types of food can be found in each one. Long ago it was difficult for Italians to travel to other regions within Italy. This resulted in distinct styles and ways to prepare food in each region as few people were exposed to other types of cooking. So even though Italy does not seem to be a very large nation geographically, it still has a wide range of flavor. Northern and southern Italy are very different in climate. The south has very warm weather while in the north the weather is cold. Dry pasta, like spaghetti and rigatoni, is found more in the southern areas because it is easier to dry in warm weather. Since it was more difficult to prepare dry pasta in the north, pastas like tajarin, pappardelle, and tagliatelle were more popular. Other types of pasta popular in the north were stuffed pastas like ravioli. The climate also affected the types of food and plants that could grow in Italy. Some plants, like olive oil, grew...

Use Your Toaster Oven To Make Homemade Dog Treats

I love my dogs and try to give them the healthiest and best foods. Dog treats are no exception, so when I have time I make my own in my toaster oven. This way I know exactly what’s in them and I don’t have to worry about dangerous additives and preservatives. They are cheaper than store-bought yet easy to make. Below you’ll find a simple, basic recipe plus my two dogs favorites: bacon balls and peanut butter bars. I find the toaster oven provides an ideal baking environment for the dog treats. The close proximity of the baking elements help them to dry out perfectly without burning. However, you could make these in a regular oven if needed. Just raise the temperature by 25 degrees F and keep a close eye on them. Basic Dog Treats Ingredients 2 1/2 cups whole wheat flour 1/2 cup of low-sodium chicken or beef stock 1 large chicken egg Directions Heat your toaster oven to 350 degrees F. Whisk together the egg and stock. Slowly mix in the whole wheat flour. Roll out the dough to about 1/4 inch thick on a baking pan lined with parchment paper. Cut into desired shape with a pizza cutter (but don’t separate.) Bake until lightly golden, about 25 to 35 minutes. After cooling, break apart and store in an airtight container. Bacon Balls Ingredients 3 strips...
